Ready for more cool weather recipes? This one is a family favorite that I have been making for years. Here is the starting recipe, but as always, make it your own! Pork Chile Verde 2 Tbsp Olive Oil 2 1/2 lbs pork butt cut in 1” cubes 1 large onion, chopped 8-10 cloves of garlic, chopped - I use more 1 Tbsp cumin smashed or 1 tsp ground cumin (or to taste) 2 - 4 cups chicken broth 2 large cans tomatillo, skinned & chopped 2 cans diced green chiles 1 bunch cilantro (optional) Salt, pepper & lime juice, to taste In oil in a large skillet, brown meat over high heat on all sides. Remove meat and set aside. In fat remaining in skillet, cook onion and garlic until soft. Add cumin, then broth and tomatillos. Bring up to a boil; add chilies & pork. Reduce heat to a simmer. Cook 45 minutes to an hour, or until pork is tender. Discard any roots from cilantro & finely chop stems. Add half to pot. Cook 5 more minutes. Taste for salt & pepper, and add enough lime juice to give a slight tang. Serve with tortillas, remaining cilantro, cheese, onion, tomato & avocado.
