Sweet Potato Pie 
( To make this into a pumpkin pie - substitute 2 cups canned pumpkin for sweet potato and use only 1 cup evaporated milk)
2 eggs
1/2 cup sugar 
1 teaspoon cinnamon
½ teaspoon ginger
½ teaspoon allspice
½ teaspoon nutmeg
½ teaspoon salt
3 TBs.  real maple syrup 
1 cup and 3 TBs. evaporated milk 
2 cups mashed cooked sweet potato
1.  In a large bowl beat well the eggs, sugar, all the spices and salt.
2.  Mix in the milk and maple
3.  Mix in the sweet potato.
4.  Pour into pie shell
5.  Bake for 30 minutes at 400 degrees F.
6. Then bake for another 30 minutes at 350 degrees F.
