Pumpkin Puree

1 Pumpkin

Wash pumpkin.  Cut pumpkin in half and remove the stem and bellybutton.  Be sure to save flesh from stem if possible. You paid for it, use it.  Cut pumpkin into pieces that will fit well into your slow cooker.  Add a bit of water to the bottom of the cooker and pack pumpkin pieces in, as much as you can fit with the lid on.  Turn on low and cook for 6-8 hours or until pumpkin is soft.  Allow to cool and remove the skin from the pieces with a knife of spoon.  Pumpkin can be mashed by hand or with made smooth in a food processor or ricer. 

When smooth measure out puree into zip top bags or other freezer vessel.  I put mine in 2 cup measures and flatten the bag when freezing.  This way I can use 1 cup or 2 cups at a time with easy measuring, even when frozen.  Puree can be kept frozen up to a year and great in pie, soup or even pumpkin bread recipes.  Enjoy!
