Crock Pot Beef Stew

3-4 Pounds Beef, tough cut, cubed
1 Pound Potatoes, waxy
1 Pound Carrots, peeled, bite Size
1 Pound Mushrooms, your favorite kind
8 Oz Tomato Sauce OR 3 Tablespoons Tomato Paste
1 Bunch Parsley
1/3 Cup Flour, all purpose
2 Teaspoons Salt, kosher
2 Teaspoons Paprika
2 Bay Leaves
3 Cloves Garlic, smashed
1/2 Teaspoon Black Pepper Corns, whole
3-5 Tablespoons Oil
2 Cups Water

In a tea ball or piece of cheese cloth, add garlic, bay leaves and pepper corns.  Secure tightly and place in the crock pot.

In a large bowl, place flour, salt and paprika.  Mix to combine well, and add diced beef. Toss and coat all pieces. Gently fry the beef in 2-3 batches in oil, in hot skillet just until fond develops.  Place browned meat in crock pot. 

If using tomato paste, place in meat pan with a bit of the water from the crock pot. Heat and swirl loosening up the fond (brown bits).  Add to the crock pot.  If using tomato sauce, add to the pan and cook the sauce down until thick, loosening up the fond (brown bits).  Add to the crock pot.  Add mushrooms, parsley, and the rest of the water.   Cover the crock pot and turn to high until hot, then down to low.  

2-3 hours later check progress, and remove parsley.  Add potatoes and carrots, mixing the whole pot.  Check for seasoning and add salt if needed.  Cook 2-3 more hours until meat is the doneness you like.  Remove spice packet and serve!  Feed 8 normal humans or 4 Bears.
