This is one of my favorites, and you can see how it all comes together in less than 20 minutes from start to finish. The baked sweet potato discs offer a nice gluten free option to anyone who's looking to reduce their processed food intake (sprouted grain buns would be a good option here too) but I like all of the nutrients the sweet potato offers us and the way I baked them for this recipe makes them hold up beautifully when you bite into your fully assembled burger. This recipe is pretty typical of what I have you eat in my 30-day clean eating program (you can get more info on that at http://fuel.thebettyrocker.com/ ) - when you're eating whole foods that you prepare yourself, a tiny bit of planning and prep can take you far, and you should be able to completely enjoy the entire experience of eating! I hate counting calories or stressing about what I put in my mouth - that's why I focus on whole foods and balancing the nutrients I need as an active person to maintain a lean and strong physique, support my lean muscle and keep fat burning all day. In combination with the fast-paced HIIT circuits I do, I also do a couple days of strength training per week and spend most of my fitness focus on making sure I have good food prepped and a plan for what I'm going to eat. Failing to plan? Planning to fail. Even if you don't do much food prep, having a few staple carbs on hand can really save you. you can mix and match what you prep with all kinds of protein options, and add healthy fats like avocado, whole eggs (which double as a great protein source too) and high quality cooking oils.
