Ginger Pickle/Inji Puli - Onam Special Series No 2

No meal is complete without pickles. Ginger pickle is not only tasty but also aids digestion. Here is how you can easily make it at home in no time. Ingredients: 1 cup finely chopped Ginger 1/2 tsp Mustard seeds 4-5 dry Red Chillies 5 finely chopped Green Chillies 1/4 tsp Hing 1/4 tsp Turmeric powder 1/4 tsp Red Chilli powder 1/4 cup Tamarind pulp 1/4 cup Jaggery 1/4 cup Oil Few Curry Leaves Salt to taste Method: In a pan heat the Oil and splutter Mustard seeds and then put dry Red Chillies, finely chopped Ginger, Green Chillies and saute well. Soak Tamarind in 1/2 cup water and separate the pulp. Also, dissolve the Jaggery in 3/4 cup water and keep aside. Fry the Ginger till brown. Add Curry leaves, Asafoetida, Turmeric powder, Red Chilli powder and fry for a minute. Put in Tamarind pulp, dissolved Jaggery and Salt. Boil this mixture on low flame for 8-10 minutes.
