INGREDIENTS
Cake batter:
2 1/2 cup (340 g) all-purpose flour
1 1/3 cup (286 g) granulated sugar
3 large eggs
8 oz (226 g) butter
2/3 cup (65 g) baking cocoa powder (I’m using the Hersey dark cocoa)
1 1/4 cup (250 ml) hot water
2 tsp baking powder
2 tsp vanilla extract
1/2 tsp salt

Frosting:
12 oz (340 g) butter
2 1/2 cup (315 g) powdered sugar
2/3 cup (65 g) baking cocoa powder
4 tbsp heavy cream
1 tsp vanilla extract
1/2 tsp salt

INSTRUCTIONS
Step # 1 - Prepare the batter
Pour 1 & 1/4 cup (250 ml) hot water into the cocoa powder, stir to dissolved, set it aside to “bloom” and cool down.
Using an electric hand mixer (or stand mixer), cream the butter and granulated sugar together in a mixing bowl on high speed until light and fluffy, about 4 minutes.
3. Sift flour and baking powder into the (butter/sugar) mixture, then add the cocoa liquid, eggs, vanilla extract, and salt
4. Beat 2 ½ minutes until it’s all well combined. The batter should be smooth and without lumps.

Step # 2 - Baking the cake
1 Preheat oven to 350° F (180°C).
2. Grease and then line the cake pans with parchment paper.
Cake pans are 8” x 2” round (20.3 cm x 5 cm).
3. Pour batter into the prepared pans. Divide evenly
4. Tap the pans firmly on the counter a few times to release any large trapped air bubbles
5. Bake at 350° F (180°C) for 30 minutes
6. Remove pans from the oven and cool on wire racks for at least 2 hours before frosting.

Step # 3 - Prepare the frosting
1. Mix the room temperature butter with an electric hand mixer on high speed until light and fluffy, about 2 minutes.
2. Add powdered sugar 1/3 at a time, then add heavy cream. Mix until all ingredients are evenly distributed.
3. Next, add cocoa powder, vanilla extract, and salt.
4. Hand stir to moisten the cocoa first and then mix with electric hand mixer on medium speed until well combined, about one minute.
The consistency of the frosting should be smooth and spreadable.

Step # 4 - Frosting the cake
1. Put 1/3” (approx.1 cm) thick of frosting on the top of the first cake.
2. Stack the second cake on top to make a 2-layer cake
3. Cover the top and all sides with frosting
4. Using the tip of the offset spatular (or with a spoon) to make random swirls to create swooping design on the cake.
5. Cut and serve. Enjoy!
