This recipe produces a super moist and flavorful carrot cake. I will also show you how to prepare a cream cheese frosting that is smooth and easy to apply on your cake.

INGREDIENTS
For cake:
3/4 lb (340 g) shredded carrots (approx. 4 medium sized carrots)
2 1/4 cups (292 g) all-purpose flour
3/4 cup (155 g) brown sugar
3/4 cup (155 g) granulated sugar
3 large-sized eggs (approx. 185 g)
3/4 cup (180 ml) vegetable oil
3/4 cup (180 ml) buttermilk
2 tsp baking powder
1 cup (110 g) chopped pecans
1/2 cup (65 g) raisins
2 tsp vanilla extract
2 tsp cinnamon powder
1/2 tsp nutmeg
1/2 tsp salt

For frosting:
8 oz (226 g) cream cheese at room temperature
4 oz (113 g) butter at room temperature
1 1/2 cup (185 g) powdered sugar
1/2 tsp salt

INSTRUCTIONS
Cake:
1 Preheat oven to 350° F (180°C).
2. Grease and line a cake pan with parchment paper. Cake pan size is 8” (20.3 cm.) round and 2” (5 cm) deep.
3. Clean, peel, and shred the carrots. Set aside.
4. Sift flour and baking powder into a mixing bowl.
5. Add vegetable oil, buttermilk, eggs, cinnamon powder, nutmeg, vanilla extract, and salt.
6. Using a stand or handheld electric mixer on low speed, mix for 1 minute. Then, on medium speed, mix 2 minutes until it’s all well combined. Don’t mix too long or you will have excessive bubbles in the batter.
7. Add shredded carrots, pecans, and raisins. Mix well.
8. Pour batter into prepared pans. Divide evenly.
9. Tap the cake pans firmly on the counter a few times to release any trapped air bubbles.
10. Bake at 350° F (180°C) for 35 minutes.
11. Remove pans from the oven and cool on wire racks for 2 hours.

Frosting:
1. Put cream cheese on a piece of paper towel to soak up any liquid.
2. Using an electric hand mixer (or a stand mixer) cream the butter and icing sugar in a mixing bowl until fluffy, about 2 minutes.
3. Add cream cheese, vanilla extract, and salt - mix until mixture is well combined, about one minute. Note: do not over-mix the frosting. It will become too soft to frost later.
