How to make Easy Chicken Dinner Casserole (Family Favourite)

This is a family favourite from my old Betty Crocker cookbook, and it's so easy to throw together if you've got cooked chicken on hand. The cream of chicken soup cans in Australia tend to be larger, but hubby doesn't mind having a bit of extra sauce - I actually used a full 420g can. I also used chopped onion as we don't have whole canned onions here. INGREDIENTS: 1 package (10 oz / 283g) frozen peas and carrots 1 can condensed cream of chicken soup (10-3/4 oz / 304g) 1 can small whole onions, drained (8 oz / 226g) 1 can mushroom pieces, undrained (4 oz / 113g) 2 cups cut-up cooked chicken or turkey 1 cup crushed potato chips METHOD: Mix peas and carrots and remaining ingredients except chips in an ungreased 2-quart (1.9L) casserole or 8x8x2 inch (20x20x5cm) square baking dish. Sprinkle with crushed chips. Bake uncovered in 350F / 180C oven until hot and bubbly, about 35-40 minutes. Serve this meal-in-a-dish with a crisp salad and bread rolls if desired. MICROWAVE DIRECTIONS: Mix all ingredients except chips in a 2-qt microwaveable casserole. Cover tightly; microwave on high (100%) 5 minutes; stir. Cover tightly and microwave until hot, 5 to 7 minutes longer. Sprinkle with chips. Makes 6 serves, 185 calories per serving.
