This is a quick 30 minute recipe for Linguine With Clam Sauce. You can also make a red clam sauce by adding a red tomato puree, but the preparation for the linguine with red clam sauce takes a bit longer as the tomatoes need to cook down to bring out the full flavor. I chose not to add whole clams to this in effort to keep my cook time in under 30 minutes, but feel free to add fresh clams to this linguine with clam sauce. It adds a little more time, and is a little more messy to eat. The recipe for my linguine/ linguini clam sauce is below. I made more than the recipe listed:

The Linguine and Clam sauce recipe I made was for a more portions. Below is a recipe for 4.

2 cans chopped clams, drained reserving 1/2 cup
1 clove garlic, minced ( or to taste)
Capers 2 ounces
Butter 2 Tbsp
1⁄8-1⁄4 teaspoon dried red pepper flakes (or to taste)
1⁄2 medium onion, diced ( I personally go a little heavy)
2 tablespoons extra virgin olive oil
1 teaspoon dried oregano
1 teaspoon basil (dry is fine)
2 teaspoons parsley (dry can be used also)
1⁄2 cup white wine (whatever you want to use) dry preferably
12 ounces linguine noodles
freshly grated parmesan cheese (to taste)

Cook linguine according to package
In saute pan heat olive oil over medium heat.
Add onion, garlic and red pepper flakes, and 1/2 butter
(Use as much or as little pepper flakes as you like, this can get HOT. I like mine to burn just a little!!) Cook just until onions start becoming transparent.
Toward the end of the cooking time, throw in the oregano and basil.
When onion mixture is done, add the chopped clams, capers, the reserved liquid, and the wine.
Simmer about 5 minutes over medium heat.
Add parsley and simmer one minute more. Add remaining butter to finish
Add clam mixture to your large pot of well drained linguine and mix gently.
Add grated parmesian cheese to taste.
Its That Easy
