Homemade Enchiladas from scratch. I made these from scratch, outside of the tortillas and cheese. I made the sauce using red pepper pods from my favorite Hispanic market. I steamed/boiled them for about an hour adding garlic and onions to taste about 45 minutes in. Once the peppers were softened, I strained the mixture into a pot and added cumin, salt and chicken bullion. I then thickened it with a flour and canola roux. The beef I used was leftover beef and beef short ribs that were left over from a previous cook. You can use whatever meat you want. The secret is in the sauce!! Once the sauce was thickened I put each tortilla in the microwave to soften it, then added the meat and rolled and put in a casserole dish. My next step was to add my enchilada sauce and cheese. Add as little or as much as you like. Bake for 20 to 25 minutes at 350. Make sure you don't overcook, so keep an eye on it. Next step...EAT!
