We don't get a lot of tri-tip out here, unless you go to a specialty store you hardly see it. I happened to see this at a grocery store, and had to buy it. I decided to reverse sear this. I applied olive oil, salt, garlic powder, paprika and coarse black pepper to it to begin. I think I had it sit in the refrigerator for about 3 hours. A little longer than I was thinking, but I got caught up in the Seattle Green Bay game. After that, I pulled it out of the fridge and let it come to room temp (about and hour). Then I took it out to my Weber, which I had set up with 2 zones. I had the grill at about 300. It took about 20 minutes in the cool zone for the meat to get to 135ish. I then took it off and let it rest. After 25 or so minutes I took it back out to the grill and seared it on both sides on the hot zone of the grill. Since it had already rested, it was ready to cut as soon as it was seared (about 3 min on each side give or take) I was looking for medium rare, but closer to medium because my wife doesn't like things too pink. Try this out sometime.
