Delicious and easy pulled chicken from DietDoctor.com - make it in the slow cooker or stove-top. OK full disclosure — we did not use the 3 Tbsp of chilli powder called for. That would have made it WAY too hot for our tastes, and we like spicy things. I cut it down to 1 Tbsp and added a single chipotle pepper as well. That gave it just the right amount of heat and such a lovely flavour. I also used a fresh, all natural guacamole with no nasty ingredients rather than buying avocado. I’m not much of an avocado fan, but the guacamole was absolutely delicious with this meal. It’s now on our favourites list — make whatever substitutions you like to make this a favourite for your family.

Serve it as a pulled chicken taco salad as we did, or wrap it up in flaxseed wraps [VIDEO LINK] which have virtually no carbs. Either way, we found this so tasty and so easy to make. You can use boneless chicken thighs, or breasts if you prefer. Makes six servings.

Ingredients
 • 1 yellow onion, finely chopped
 • 60 ml (1/4 cup) water
 • 3 tbsp olive oil or coconut oil
 • 3 tbsp tamari soy sauce
 • 3 tbsp chipotle powder or chili powder[I used 1 Tbsp chili powder and one chipotle pepper]
 • 1 tbsp tomato paste
 • 1 tbsp red wine vinegar
 • 1 tbsp salt
 • 900 g (2 pounds) boneless chicken thighs
Suggested toppings for serving:
 • 325 ml (1-1/3 cup) crème fraîche or sour cream
 • 275 g (10 oz) lettuce
 • 3 avocados
 • 2 scallions
 • fresh cilantro

Instructions
 1. Mix the ingredients for the marinade directly in the slow cooker and combine. Add the chicken and stir. Set the slow cooker on high heat for 3 hours or low heat for 5 hours.
 2. When the chicken is ready, pull apart the meat with two forks into small stringy strips in the slow cooker and stir to mix with the cooking juices.
 3. Serve with finely chopped scallions, avocado, fresh cilantro, lettuce and a generous dollop of crème fraîche or sour cream.

Can I make pulled chicken without a slow cooker?
If you don't have a slow cooker you can use a spacious heavy-bottomed pot. Mix the marinade, add the chicken and combine well so the meat is covered. Bring to a boil then lower the heat to medium-high. The chicken should simmer for 1.5-2 hours with the lid on. Flip the chicken fillets halfway through and further lower the heat. Add water if needed.
